Crew's Kitchen: Bran Muffins
Flight Attendants are famous for sharing good recipes that are healthy, quick, and most importantly portable! This blog is for those of you who want to get a head-start on creating crew food that is tasty and simple and packs well in lunch bags for a drive in the car, a summertime picnic, or a meal at 40,000ft. Bon appetite!
Carrie's Bran Muffins
Who doesn't need a good helping of bran after flying through multiple time zones?!
Dry Ingredients:
1 Cup whole wheat flour
1 Cup natural bran
3/4 Cup brown sugar
2 Tbsp wheat germ
1Tsp salt
1Tsp baking powder
Wet Ingredients:
1/3 Cup vegetable oil
3/4 Cup milk
1 Tsp vanilla
1 Egg
1 Cup chopped dates, dried or fresh cranberries, blueberries, raisins, etc.
Can select just one of these ingredients or a combination of a few!
Preparation:
Preheat oven to 375 degrees
In a large bowl, sift all dry ingredients together
In another smaller bowl, mix all wet ingredients together
Add wet mixture and 1 cup of fruit to dry mixture using as as few strokes of your spoon as possible
Do not over mix ~ just stir enough so all ingredients become moist
Baking instructions:
Drop into greased muffin pan (spray with Pam)
Bake 18-20 minutes (or until toothpick in center of muffin comes out clean)
Cool on wire rack and then enjoy guilt-free
Note: This recipe doubles and triples easily, and muffins freeze well.
